Well, I Thought It Was an Original Idea

Inspired by a recent friends-coming-over event where we prepared a vegan meal, I started on a line of thinking about other "substitute" types of food--vegan cheese, impossible meat, and then, the concept of gluten-free bread.
Faux-caccia!
But then a quick Lycos search indicated to me that people have most certainly had this idea before, with that exact name, and they've been kind enough to actually create recipes to make it a reality.
Oh well, on to the next idea...
